La Chandeleur! Crepe Day!

Today, February 2nd, is La Chandeleur in France. It is the last cycle of Christmas celebration best known as the Crepe day where family and friends gather to enjoy crepes. No real celebration in France without food!
The shape of the crepe reminds us of the sun that will shine again after a harsh winter, and the wheat in the crepe brings good luck for the next harvest. Here is a recipe of Crepes from my grand-mother's cookbook!
Recipe for 13 crepes:
In a big bowl:
2 cups of flour
2 eggs
2 packs of vanilla sugar
Lemon zest (1 lemon)
A pinch of salt
Slowly add:
2 3/4 cups of water while wiping
Turn on the stove (medium heat)
Put 3 tablespoons of butter in a pan, once the butter melts set it aside.
Put half a ladle of dough in the pan (the pan should not be on the stove when you put the dough). When the crepe starts to cook, turn it and leave it for 15 seconds. Each crepe will need a bit of the melted butter we set aside for the crepe not to stick.
Use strawberry jam, rose, or violet confit from Lavender Blue and Bon Appetit!
