Caramelized Onion Tarte Tatin with goat cheese

A very simple recipe for a sweet and savory tarte tatin to serve as an appetizer or as an aperitif! I added goat cheese but you can replace it with slices of pre-cooked vegetables, bacon, etc. And There you go ! A very easy and delicious tatin!

Ingredients:

- 6 to 8 onions (depending on the size)

- 1 puff pastry

- 2 Tablespoons of Mustard (I prefer the Moutarde a l'Ancienne)

- 3 Tablespoons of balsamic vinegar

- 7 oz of goat cheese

- 1 oz of butter or olive oil

-  1 and a half Tablespoon of honey or sugar

- Salt / pepper

- 1 teaspoon of Herbes de Provence

1. Heat the oven to 350 degree

2. Peel and cut the onions in 3 to have big pieces as you don't want them to come off

3. Melt the butter, let the onions brown (around 4 minutes on each side). Add the balsamic vinegar, sugar and let it caramelize for 5 minutes

4. Put a parchment paper in your pie mold, put the onions and the goat cheese on your paper. Add the herbes de provences.

5. Spread the mustard on your puff pastry and then cover the onions /goat with the pastry, tucking it under slightly.

6. Put in in the oven for 35 to 40 minutes

7. Remove from the oven and leave it to cool. Once cool enough to handle, turn the tarts so the onions are now facing up.

8. Add salt and pepper

Serve with a nice green salad, bon appetit!
