Spring is here, who doesn't like a flagrant lemon cake?

I am a big fan of lemons.. lemon tablecloths, lemon cakes and lemon everywhere! For me, lemon evokes the sun of Provence and the sun of California. I have tried several lemon cakes recipe and found that this was my favorite one because you can taste the lemon in it unlike many other recipes.

You can also use the same recipe for orange but I did find it a bit less flavorful. This recipe is for a small cake, using a 9" round bake pan. Of course you can double it for bigger portion.

I usually use grams as a measurement for baking as it is more precise. 

Ingredients:

  • 125g butter (½ cup)
  • 125g sugar (⅔ cup)
  • 125g all-purpose flour (1 cup)
  • 2 eggs
  • 2 unwaxed lemons
  • 2 tsp baking powder
  • 1 pinch of salt

Beat the softened butter and the sugar together in a mixing bowl until creamy. Add the eggs one by one and mix.

Zest the lemons and then juice them. It will look like a lot of lemon juice but believe me this exactly how it should be. Add to the mixture and beat.

Mix the flour, the baking powder and the salt in a separate bowl, and gently stir them into the mixture.

Butter a 9" pan and pour the batter in it. 

Bake for 20 to 25 minutes at 180°C (350°F). Let the cake cool down for 10 minutes before you remove it from the pan.

Bake one, put it on top of our lemon tablecloth and have it with our set of tea cups!
