Red lentil and sweet potato meatballs with a curry yogurt sauce

Ingredients:
1 Sweet Potato (around 300g)
150 g of red lentils
Half a red onion with few slices for serving
1 small Garlic Clove
1 Tablespoon of Cumin powder
5 Branches of Flat Parsley
Soft Bread
For Yogurt Sauce
1 lime
500 g of Greek Yogurt
2 Tablespoons of curry powder
Olive oil
1. Peel and cut the sweet potato into small cubes. Cook it in a large pot of salted water. After 10 minutes, add the red lentils and continue cooking for 15 minutes. Drain well, pour into a bowl and mash with a potato masher to obtain a smooth preparation. Let it cool.
2. Meanwhile, peel the red onion and garlic, then mix them with the bread (without the crust). Add this mince to the mash and mix. Add the cumin, the chopped parsley, salt and pepper. Form 35g balls between your hands and chill for 30 minutes.
3. Preheat the oven to 350 degrees. Bake the meatballs in a lightly oiled oven dish, 20 to 25 minutes, turning them from time to time, until they are a little golden.
4. Prepare the yogurt sauce: zest the lime and squeeze out some of its juice. Mix the yogurt, zest and a few drops of lemon juice, curry and olive oil, salt and pepper. Serve the meatballs hot with the yogurt sauce and red onion strips.
Serve it with a nice red wine from the Loire region!
