Brioche or Galette?

King's Brioche or the famous King's Galette?

On the second Sunday after Christmas, the French eat a galette or a brioche. In the galette, there is a hidden  bean and a porcelain figurine: those who find them become the king and queen of the day and are given a golden cardboard crown. In the North, in the Paris region and in Lyon, the frangipane puff pastry (a buttered almond cream) dominates, while in the South, the crown-shaped brioche, flavored with orange blossom and garnished with candied fruit remains more traditional.

We pack up the Christmas log and make way for the Brioche des rois! Be ready for January with this brioche of kings like we eat it at home in Provence. Beautiful and well puffed, this brioche is flavored with orange blossom or citrus zest, and decorated with candied fruit and sugar.

Ingredients:

300g flour 

75g sugar 

75 g butter at room temperature 

2 eggs 

1 pinch of salt 

1 packet of baker's yeast 

zest of an orange or lemon 

2 tbsp. tablespoon orange blossom water 

200g candied fruit 

Apricot jam 

3 tbsp. tablespoon pearl sugar

1. Put in a bowl the 2 beaten eggs, the butter, 2 tbsp. orange blossom water, orange zest, a pinch of salt, sugar, and mix well

2. Add the flour and the baker's yeast and knead for 10 minutes

3. Let the dough rise at room temperature, covered with a tea towel, for 1 hour

4. When the dough has risen, knead it by hand to remove the air, and form a long sausage that you place in your savarin mold / the fluted tube cake mold  (don't forget to slip a bean in!).

5. Let the dough rise in the mold for 45 minutes to an hour, and preheat the oven to 350. Don't forget to cover the dough

6. Beat a whole egg with a pinch of salt (which will liquefy the egg) and brush it on the brioche

7. Bake for 30 minutes at 350

8. Remove from the oven, coat with apricot jam (microwave the jam for 30 seconds with 1 tablespoon of water to make it more liquid and easy to brush) and decorate with candied fruit and pearl sugar.
